Healthy Oatmeal Raisin Breakfast Cookies

Cookies for breakfast?!? Thank you Cary! These are great fuel first thing in the morning, or after a good swim. If eating before a workout, leave at 30 minutes for digestion.

Try varying the ingredients, coconut and dried apricot bits would be nice too!

3 ripe bananas, mashed
1/3 cup unsweetened applesauce
2 cups regular oats
1/4 cup milk of choice - give almond a try!
1/2 cup raisins
1 tsp vanilla
1 tsp cinnamon

Mix all ingredients, and scoop out 14 rounded cookies onto a prepared baking sheet (prepared = parchment paper, or a light oil spray). Bake at 350 degrees for 15-20 minutes.

1 breakfast cookie = 102 calories, 1.2 grams fat, sodium 1.7, 21.5 grams carbs, 2.3 grams fibre, 7.2 grams sugar, 2.6 grams protein
